All of the illustrations in the Field Guide look like perfectly repeated patterns. Why is this? Will it be, as described, ever-evolving as I progress? I will not use the recommended number of stitches in the hope of facilitating this.

This is my opinion only. If you look at Cecelia’s patterns on ravelry or ever hear her speak the evolution becomes clear. The field guide is like a little taste to help you understand the concept. You are correct. Change the stitch count and everything changes.
